The Seed
The journey begins with two small ripe seeds inside the cherry of the Coffea tree. The variety (Bourbon, Catuai, Pacamara, Typica) determines the natural sweetness, acidity, density, and aroma.

Cultivation & Growth
The Coffea tree can take up to five years to fully mature. During this time, farmers will maintain soil health to ensure there will be no harsh flavors in the coffee. Trees grown in the shade will mature more slowly, allowing more nuanced flavors and acidity.

Harvesting
Only perfectly ripe cherries are picked often by hand, one at a time. Harvesters will judge each cherry by touch, color, and resistance. A perfectly ripe cherry will bring out the sweetness, clarity, and balanced acidity of the coffee bean.

Processing
Once harvested, cherries must be processed quickly to prevent fermentation flaws. The three most common methods are washed, natural, and honey. The way the cherries are processed will contribute to the coffee bean's clarity, acidity, body, and flavor notes.

Drying
Beans are spread across raised beds and dried slowly under the sun. Farmers will constantly churn the cherries to ensure even moisture and protect flavor quality. Controlled drying results in cups that age well and maintain a consistent taste over time.

Sorting & Grading
After drying, beans are hulled and sorted by size, density, and appearance, removing all defects. The more meticulous the sorting process is, the cleaner your cup of coffee will taste.

Roasting
Roasting unlocks the hidden flavors inside each coffee bean. Heat caramelizes sugars, transforms aromas, and brings out the origin’s unique character. The darker a bean is roasted, the more the coffee leans toward smoky, cacao-like, and bitter notes with lower acidity. Lighter roasts emphasize floral, fruity, and brighter flavors, accompanied by a lighter body.

Packaging & Freshness
Freshly roasted beans release CO₂, so they’re packed in airtight bags with one-way valves that let gas escape while keeping oxygen out. Most coffee will retain its balanced flavor for 1–2 months.
